Preparation
- Wash the tomatoes, cut out the green stalks and cut into pieces. Peel and cut the onions into rings.
- Mix the ingredients into a bowl with the herbs and season liberally to taste with pumpkin seed oil PGI, vinegar, salt and pepper.
Serving suggestion
Serve the tomato salad in bowls and garnish with a bouquet of fresh herbs.
This is my tip
Try and get different coloured tomatoes from the market as they make the salad look more interesting.
