Styrian salad with deep-fried chicken and pumpkin seeds

Chicken breasts

  • 2 chicken breasts
  • 50 g Steirerkraft pumpkin seeds, chopped
  • 50 g breadcrumbs
  • 1 egg
  • 40 g flour
  • oil for frying

Salad

  • 250 g mixed salad leaves
  • 4 TBSP Steirerkraft pumpkin seed oil PGI
  • 1 TBSP cider vinegar
  • salt, pepper

Garnish

  • 1 TBSP Steirerkraft pumpkin seeds, roasted & salted

Preparation

  1. Clean chicken breasts and cut off any pieces of fat. Cut into strips and season with salt. Dip strips into flour then into the beaten egg mixture and finally bread with the pumpkin seed and breadcrumb mix. Fry in hot oil. When cooked, place on kitchen towels to soak up any excess oil.
  2. Marinate the washed salad leaves with Steirerkraft pumpkin seed oil PGI, vinegar, salt and pepper.

 

Serving suggestion

Place salad on one side of the plate. Arrange the fried breaded chicken breast strips on the salad and sprinkle with roasted pumpkin seeds.
