Scarlet runner bean spread with diced potatoes

Scarlet runner bean spread
- 425 ml Steirerkraft scarlet runner beans PDO ready-to-eat
- 1 tomato, chopped small
- 2 small potatoes, chopped small and cooked
- 1 tbsp chopped leek or onion
- 1 tbsp torn horseradish
- 1 tbsp mustard
- 1 tbsp chopped parsley
- salt, pepper, savory
Bread
- toasted wholegrain white bread
Garnish
- whole beans
- torn horseradish
- diced potato and tomato
- herbs
Preparation
- Peel the potatoes, dice finely and cook in lightly salted water until soft. ash the tomatoes and cut into small cubes.
- Pour the scarlet runner beans from the can and blend with a hand-held blender to form a fine purée.
- Mix together all of the ingredients well and add herbs and spices to taste. Add the scarlet runner bean spread to toasted wholegrain white bread and garnish.
