Scarlet runner bean spread

  • 425 ml Steirerkraft scarlet runner beans PDO ready-to-eat
  • 1 tomato, chopped small
  • 2 small potatoes, chopped small and cooked
  • 1 tbsp chopped leek or onion
  • 1 tbsp torn horseradish
  • 1 tbsp mustard
  • 1 tbsp chopped parsley
  • salt, pepper, savory

Bread

  • toasted wholegrain white bread

Garnish

  • whole beans
  • torn horseradish
  • diced potato and tomato
  • herbs

Preparation

  1. Peel the potatoes, dice finely and cook in lightly salted water until soft. ash the tomatoes and cut into small cubes.
  2. Pour the scarlet runner beans from the can and blend with a hand-held blender to form a fine purée.
  3. Mix together all of the ingredients well and add herbs and spices to taste. Add the scarlet runner bean spread to toasted wholegrain white bread and garnish.
